left Over Idlis with Carrot South Indian Snack





Ingredients

  • left over idlis - 8
  • green chilies - 2 slit
  • onion - 1 , finely chopped
  • carrot - 1 large , grated
  • coriander leaves - 2 tbsps, finely chopped
  • turmeric powder - 1/4 tsp
  • red chili powder - 1/2 tsp
  • garam masala powder - pinch
  • kasuri methi - 1/4 tsp
  • tomato ketchup - 1 1/2 tsps
  • grated fresh coconut - 2 tbsps
  • oil - 3/4 tbsp
  • salt - to taste
  • curry leaves - 12-15

Instructions

  1.  First heat oil in a cooking vessel, then add the curry leaves and saute till a nice aroma emanates the kitchen. Then add the green chilies and chopped onions and saute for 3-4 monutes
  2. Now add the turmeric powder, red chili powder, garam masala powder and kasuri methi and half of the fresh coriander leaves and mix well. Then add tomato sauce and mix. and saute for a minute
  3.  Then add the grated carrots and grated coconut and saute for 4 minutes on low to medium flame. Then add the crumbled idlis and mix. Now saute for 2 minutes. Then turn off heat. Now garnish with fresh coriander leaves. Then serve this quick left overs snack warm.
